Recipe: Spooky Hot Honey Smoked Salmon Puff Pastry Hand Pies
Ingredients
For Filling
– Ducktrap Hot Honey Smoke Roasted Atlantic Salmon, skin removed, flaked
– 1 tbsp unsalted butter
– 1 large shallot, minced
– 1 garlic clove, minced
– 1/2 cup sweet corn kernels
– 2 oz full-fat cream cheese
– 1 tsp Dijon mustard
– 1 tbsp fresh dill, chopped
– Salt and pepper, to taste
Pastry and finish
– 2 sheets frozen puff pastry, thawed
– 1 large egg
– 1 tsp water
– Extra hot honey, for drizzling
– Parchment paper, baking tray
– Large cookie cutter (pumpkin or other shape)
Directions
1. Prep the salmon: Remove skin and flake into small to medium pieces.
2. Cook the base: In a skillet, melt butter over medium heat. Add shallot and garlic; cook until translucent and fragrant. Stir in corn and cook until hot and slightly softened. Remove from heat.
3. Make the filling: Add cream cheese, Dijon, and dill; stir until smooth. Fold in salmon. Season with salt and pepper.
4. Prepare pastry: Roll out puff pastry sheets. Cut an even number of shapes with the cookie cutter.
5. Assemble: Line baking tray with parchment. Place half the shapes on the tray, spoon filling into the center of each, top with remaining shapes, and crimp edges with a fork to seal.
